Mandolato is a traditional Greek nougat and it is said that the tastiest Mandolato comes from Corfu. It is made from a combination of honey, sugar, nuts and dried fruit, and flavoured with vanilla, almond or orange blossom. It is often sold sandwiched between two wafers.

In Byzantine times, Mandolato was the favourite titbit of the Emperor Justinian, who allegedly wooed the future Empress Theodora with the help of its aphrodisiac properties. The original recipe has been preserved on parchment from the 18th century and its taste is unaltered since that time.
